Aside from being the national tree of India, banyan tree has been immortalized as the tree under which the Buddha attained nirvana. It is also enshrined in Indian folklore as a shade-giving tree and a place for the village locals to meet up. We envision Banyan Tree as a place which will connect our close knit community through food
San and Florence have always shared their love affair for food and have traveled far and wide across the world to taste the hidden flavors. Food is the secret sauce which brought them together! San was born in India and Florence is from the Philippines. Banyan Tree symbolizes their journey of branching out and putting down roots together in a new land.
San shared a very special bond with his Bapi (Dad) whom he lost recently. His dad had a profound love for cooking and dreamed of having his own place someday to serve gourmet food. He spent many an evening cooking for friends and family and boy did they love it! The concept of Banyan Tree is a dedication to Bapi and his dream of a place to bring people and food together.

Originating from the Portuguese “vinha d’alhos”, Vindaloo from the Indian state of Goa is a spicy stew of tender pork cubes in red chili, garlic, and vinegar sauce. Definitely the spiciest dish on our food truck!
San's own take on this traditional Kashmiri dish of home style soft lamb meatballs simmered in a rich, creamy sauce with warm spices like fennel, cardamom, and dry ginger. This dish is much milder than our other offering on the food truck and showcases a different and unique dimension of Indian food.
Same sauce as Butter Chicken but with paneer (Indian firm cheese) cubes. It is also called Paneer Makhni due to its creamy texture.

San's aromatic basmati rice preparation which is infused with spices and ghee (Indian clarified butter). This is a recipe passed down through generations in San's family.

Taste this delicious Indian street food dessert right in our Maine backyard! Kulfi is a dense and creamy frozen dairy dessert often called "the traditional Indian ice cream". Served with nuts, mango shavings, and syrups.
Masala chai is a traditional Indian spiced tea made by brewing black tea with a blend of aromatic spices, milk, and sugar. The term “masala” means “spices” and “chai” means “tea” in Hindi, so masala chai literally translates to “spiced tea”
