Aside from being the national tree of India, banyan tree has been immortalized as the tree under which the Buddha attained nirvana. It is also enshrined in Indian folklore as a shade-giving tree and a place for the village locals to meet up. We envision Banyan Tree as a place which will connect our close knit community through food
San and Florence have always shared their love affair for food and have traveled far and wide across the world to taste the hidden flavors. Food is the secret sauce which brought them together! San was born in India and Florence is from the Philippines. Banyan Tree symbolizes their journey of branching out and putting down roots together in a new land.
San shared a very special bond with his Bapi (Dad) whom he lost recently. His dad had a profound love for cooking and dreamed of having his own place someday to serve gourmet food. He spent many an evening cooking for friends and family and boy did they love it! The concept of Banyan Tree is a dedication to Bapi and his dream of a place to bring people and food together.
We are bringing this "explosion of flavors in your mouth" dish to you right out of the streets of India. During evenings you can find throngs of locals enjoying Pani Puri and Dahi Puri on the streets of India. While Dahi Puri is traditionally a no meat dish, we are putting our local twist to this dish by offering a lamb mince version and for vegetarians a Paneer version.
Samosa chaat is a popular North Indian street food that combines crispy samosas which is Indian hand pies mixed with an assortment of churneys, and a variety of toppings to create a flavorful, tangy, and spicy snack
Bhel puri is a popular Indian street food known for its balance of sweet, spicy, tangy, and crunchy textures, making it an addictive snack enjoyed across India, especially in Mumbai. It is made primarily from crispy puffed rice mixed with onions, tomatoes, and sev (thin fried gram flour noodles). The mixture is tossed with a combination of chutneys along with spices like chaat masala and fresh coriander leaves.
Probably the most sought after Indian dish and a perennial favorite, tender pieces of chicken in a rich creamy sauce amped up by using butter from a local dairy farm. If you like flavors which are rich and complex, then look no further!
Inspired by the Portuguese preparation, vinha d’alhos, Vindaloo is a famous dish from the Indian state of Goa. Pork Vindaloo is a spicy stew of tender pork cubes in red chilli, garlic and vinegar sauce. Definitely the spiciest dish on our food truck!
If you like butter, cream and Indian cottage cheese cubes (Paneer) in a perfect harmony then you will love this dish. After all, it is called Paneer Makhni in India due to its creamy texture.

San's aromatic basmati rice preparation which is infused with spices and ghee (Indian clarified butter). This is a recipe passed down through generations in San's house.

Masala chai is a traditional Indian spiced tea made by brewing black tea with a blend of aromatic spices, milk, and sugar. The term “masala” means “spices” and “chai” means “tea” in Hindi, so masala chai literally translates to “spiced tea”
